出展者プロフィール / Exhibitor Outline：Bodegas La Purísima was founded in 1946 by several farmers who joined forces to improve the quality of Yecla wines. Their determination and desire to produce great wines finally led, in 1975, to their receiving the Denomination Origin title. This was a huge achievement for these farmers who, limited by the border of the municipality, registered the Yecla Denomination of Origin nº 27 in line with the prestigious French AOC.
The variety queen of our land is Monastrell, thanks to this exotic grape we create different wines to the rest of Spain (conventional and organic wines). Intensity, deep colour, and powerful aromas are the words that best define our wines. Also, we produce great Syrah, Merlot, Cabernet, Macabeo, Sauvignon Blanc.

Soil type: Soil permeable with high level of nutrients.
Elaboration: After a light pressing, the fermentation process is done at low temperature. The wine has been in French oak barrel ( first used )for a period of 2 months on its fine lees before bottling and filtration.
Tasting notes: Intense on the nose with hints of white flowers and citrus notes. The palate is fresh and intense, an aromatic white wine that easily stood up the challenge of maturation in French barrels. - ブドウ品種 / Grape Variety

- Type of Crop: The grapes come from vineyards of more than 25 years of cultivation on vessel.

Elaboration:This wine comes from a rigorous selection of vineyards over 25 years of age, harvested during the first week of October. After vatting, the grapes were left for three days at a low temperature, enabling all the aromas of the Monastrell variety to be drawn out.
Fermentation was conducted at a temperature of 25ºC. After vatting, the wine was transferred to new barrels where it was aged for three
months to acquire the smooth, elegant taste of oak.
Tasting notes:Black cherry colour, good intensity. Predominance of
dry figs, plums with touches of mountain slope herbs and a final of spicyaromas. Fleshy palate, well integrated mature tannins. - ブドウ品種 / Grape Variety

- Harvest:It is done at night with grape harvesting machine.
Vinification: Harvested at night, during the first week of September. For this wine only the first pressing most was used, final phase of fermentation was finished in new barrels of French oak( 5 weeks ) and here and after fermetation the wine was left on its fine lees for five weeks. Dayly “batonages” have been made.
Tasting notes:Pale yellow colour. Fresh and flowery with notes of exotic fruits mixed with the aromas of the new oak. Fullness palate, oily and long finish. - ブドウ品種 / Grape Variety

Elaboration: Harvested during the second week of September. After vatting the grapes, they were left for two days at a low temperature and after the fermentation it stayed at a temperature of 23ºC. The total maceration time was 6 days.

Elaboration: Cold maceration of two days and fermentation at a low temperature. The wine is aged for 4 months in barrels to obtain the smooth and elegant taste of oak.

Harvest: Harvesting is done at night around mid August to preserve the aromas and quality of the grapes.
Elaboration: Maceration is made at low temperature in the press. After pressing, fermentation is made at 13ºC and then ageing on lees is performed to get a great volume on the palate.
Tasting notes: In a still glass are primarily highlighted white flowers aromas. In a swirled glass appears exotic fruits hints with delicate aromas that remind us the Mediterranean character of the wine. In mouth, the wine is intense, fresh with a great volume. Soil type: Loamy-sandy and light in clay. Shallow soils.
Elaboration: Minimal maceration. Fermentation at low temperature <16ºC. Once fermentation is finished, several battonages of the fine lees originating in the same tank are constantly carried out to provide various benefits to the wine such as aromatic complexity, give body and creaminess to the wine, protect it from oxidation and extend its life, giving our wine unique characteristics.

Vinification: Maceration of 3 days in low temperature. Fermetation takes 12 days and grapes stay in small stainless steel tank for a period of 18 days. After that, wine is transported to new French oak barrels, where malo-lactic fermentation is done and it is aged ( crianza ) for 14 months.
