### WINEMAKING

ORIGIN
Sourced from vineyards in Paredones, located just 8 kilometers from the Pacific Ocean. The strong maritime influence, morning coastal fog, and cool afternoon breezes extend the growing season, preserving natural acidity and enhancing aromatic precision.
The granitic and coastal soils contribute minerality, tension, and elegance, shaping a refined and terroir-driven expression of Pinot Noir.
WINEMAKING
The grapes were hand-harvested in 14-kg crates and carefully selected upon arrival at the winery for fermentation in open-top tanks. Seventy percent of the fruit was destemmed and transferred by gravity directly into the tanks without pumping, while the remaining 30% was left as whole clusters.
Fermentation occurred spontaneously with native yeasts. Particular attention was given to the natural nutrient content of the must, allowing us to define a precise and minimal intervention nutrient plan. Fermentation temperatures ranged between 20°C and 23°C, rising naturally to preserve aromatic expression and texture.
Gentle daily punch-downs were carried out until the wine reached a density of 0.999. After alcoholic fermentation, the free-run wine was separated from the press wine. The press fraction was allowed to settle for 24 hours before being carefully reincorporated to enhance structure and complexity.
Malolactic fermentation occurred spontaneously in temperature-controlled stainless steel tanks. The wine was then aged for seven months in neutral barrels to preserve varietal purity and elegance.

Cherry-red in color with subtle brick-orange highlights. The nose reveals fresh red cherry aromas layered with delicate spice notes. On the palate, the wine is expressive and vibrant, with soft, well-integrated tannins and balanced acidity. WINEMAKING
Grapes were received at the winery and whole-bunch pressed to preserve purity and minimize phenolic extraction. Press fractions were carefully separated by yield to ensure finesse and balance in the final blend.
The must was gravity-settled with enzymatic clarification to approximately 100 NTU, then fermented in stainless steel tanks at controlled temperatures between 14–16°C using selected yeasts to preserve aromatic intensity and varietal expression.
Upon completion of alcoholic fermentation, the wine was racked off its gross lees and kept at low temperature for several weeks to maintain freshness and stability before sulfiting. Prior to bottling, the wine was gently filtered to ensure clarity and precision.

WINEMAKING
Grapes were meticulously hand-harvested and vinified in cocciopesto amphorae under a strict protocol designed to minimize oxidation and ensure microbiological precision throughout fermentation.
Selected yeasts characterized by low sulfur dioxide production were employed, alongside sequential inoculations with non-Saccharomyces strains to enhance aromatic complexity and stability. Co-inoculation with selected lactic acid bacteria ensured a controlled and harmonious malolactic fermentation.
Available nitrogen levels in the must were carefully measured, and nutrition was adjusted accordingly using both organic and inorganic nutrients to guarantee a healthy and complete fermentation without the need for added sulfites during vinification.
Post-fermentation maceration was determined through continuous sensory evaluation. The wine was then transferred to stainless steel tanks for stabilization. No sulfites were added prior to bottling, preserving the wine’s natural expression and purity.

WINEMAKING
Grapes were received at the winery and whole-cluster pressed to preserve aromatic purity and finesse. The varieties were co-fermented, allowing natural integration and synergy from the earliest stages of vinification.
Free-run juice was separated from press fractions according to yield to maintain balance and precision. The must was gravity-settled with enzymatic clarification to approximately 100 NTU before fermentation.
Alcoholic fermentation took place in stainless steel tanks at controlled temperatures between 14–16°C using selected yeasts to protect aromatic expression and textural refinement.
