About the vintage

2022 offers us what Burgundy knows best: a vintage that is both qualitative and generous.

The vines handled the extreme weather very well, making the most of the slightest rain shower. Budburst, later than in recent years, partially protected the vineyard from the April frost.

Then, thanks to the subtle balance it maintains with the Burgundy terroir, the vines survived four heatwaves and a general lack of water without damage.

This vintage offers wines with lovely concentration and balance. The white wines stand out for their roundness, suppleness and complexity, while the reds are highly colored and supple on the palate, with good concentrations supported by silky tannins.

Finally, this vintage is astonishing: despite the very hot conditions of the year, its aromas of fresh fruit and its lovely vivacity open up a bright future.

Terroir

This terroir is of the Plaine de Saône type, with brown silty-clay soil and no limestone. The water reserve is very high and the vines do not suffer from drought throughout the year.

The soil is very deep, allowing good rooting and a high level of organic matter. We note the presence of deep limestone (precipitation of silica in limestone) and iron nodules.

The vines are located on several parcels of land in the lower part of the village. They range in age from the 1970s to 2018, covering a surface area of 1.53 hectares.

Viticultural practices

The grapes are grown biodynamically.

In spring, we stimulate the microbial activity of the soil with very energizing preparations such as 500 (horn manure) and 500P (prepared horn manure).

During the vegetative cycle, in addition to copper sulfate treatments in the vineyards, we also spray decoctions of horsetail, nettle, wicker and silica, which have energizing and disease-prevention properties for the vines.

Natural grass grows between the vines, and the soil is worked mechanically.

The vines are trained in single Guyot, keeping one long cane and one spur per vine. One bud is kept every two eyes in order to obtain well-ventilated vines and beautiful grapes.

Vinification

The grapes are sorted on a sorting table and 100% destemmed. The whole berries are transported to the vats in small stainless-steel wagons in order not to crush the raw material.

Once the berries are vatted, a pre-fermentation cold maceration begins for 8 days at 10°C.

After 8 days, the vat is heated to 18–20°C to allow the natural alcoholic fermentation to start.

During this phase:

2 pump-overs per day are carried out at the beginning and middle of the fermentation

reduced to 1 pump-over per day at the end of the alcoholic fermentation.

The total vatting time is 20 days.

The finished wine is then stored in stainless steel vats for 15 days in order to clarify and obtain a clear wine.

Ageing

15 months of ageing:

About the vintage:
A hot and dry year, which will have known three heatwaves: end of June, July, end of August. The sanitary condition were perfect and the quantities produced were moderate due to the lack of water that summer. The white wines are rich and ripe, but fine and well balanced, the grapes having retained a good level of tartaric acid. Great vintage for the Pinot Noir which produced intense, ripe, balanced and very fine wines.

TERROIR

Clay and silt soil (Brown soil) with a western exposure. The plot is located in a "basin" where it is cool and the vine is rather late. There is some humidity but the soil dries well. The year of plantation is 1956-1957 (area 0,90 hectares).

VITICULTURAL PRACTICES

The vines are grown organically. Mechanical labour of the soil. They are pruned in simple guyot with long sticks and disbudded every other eye, so the bunches end up beautiful and airy..

VINIFICATION

Grapes harvested by hand in crates, sorted on a sorting table and destemmed at 100%, the whole berries are conveyed into vats in small stainless steel wagons so as not to crush the raw material. Traditional Burgundy vinification, in open thermoregulated vats.

Saint Aubin 1er Cru (Red) 2020

About the vintage

A great classic, born of a peculiar year

The 2020 vintage, produced in relatively complicated conditions and context for everyone, was marked by historical precocity from budburst to harvest. The result is absolutely exceptional and remarkably classic.

The early flowering season gave rise to hopes for an abundant harvest, but the high temperatures of the summer, coupled with the lack of precipitation, caused a significant water deficit.

Ripeness sometimes arrived at its own pace, just like the flowering season: choosing the harvest date required both patience and a cool head.

The peculiar conditions of this vintage generated new and quite unique balances. The white wines are fruity and express a nice aromatic complexity, with very pleasant acidity.

The red wines stand out for their incredible color. They are concentrated and have character while keeping a nice freshness that offers gourmet profiles focused on black fruits.

Terroir

This terroir is located on a steep hillside. The soils are poor and very chalky.

The result is a wine that is straightforward, fine, elegant and highly perfumed, as Pinot planted on “terres blanches” often is.

The vines were planted in the mid-1970s and are managed biodynamically.
Surface area: 2.30 hectares.

Viticultural practices

The vines are grown biodynamically.

The vines are trained in single Guyot, keeping one long cane and one spur per vine. One bud is kept every two eyes in order to obtain well-ventilated vines and beautiful grapes.

Vinification

The grapes are carefully hand-picked into small crates, then sorted on a sorting table before full destemming.

They are then transported in small stainless-steel cases in order to preserve the raw material in perfect condition without damage.

Traditional Burgundy vinification is carried out in open-top temperature-controlled tanks.

Terroir

This cuvée is a blend of two areas in Mercurey, whose characteristics are quite different.

The grapes for the L’Automne cuvée mainly come from the Les Vaux plot, where the vines are quite old and benefit from perfect exposure. The grapes obtained are dense and fleshy, producing a deep and gourmet cuvée.

The blend is completed with a small proportion from the Les Montelons plot, located on the Mercurey plateau, opposite Rully. This site is at a relatively high altitude, with cooler temperatures and clay soils, producing crisper and fresher grapes.

The Le Printemps cuvée is produced using the reverse proportion.

Viticultural practices

The vines are grown organically.

The soil is worked mechanically. The vines are pruned in simple Guyot with long canes and are disbudded every other eye so that the bunches develop beautifully and remain well aerated.

Vinification

The grapes are harvested by hand in crates, sorted on a sorting table and 100% destemmed.
