A blend of merlot, syrah and petit verdot, these varieties were elaborated separately and aged in French oak, to then generate the final blend before being bottled.

It is a tasty and refined red that clearly reflects the character of our Atlantic vineyard.

Part of the merlot was harvested from the plot CERRO 3 “Cuarzo”, planted on a stony slope facing southeast, facing the Atlantic, with a 15% slope and a soil with a high presence of quartz. Also from plot NORTH 2, located on a lower slope of Cerro del Toro, with a soil composed of more clay and calcium carbonate, product of the deposition of sediments over millions of years.

The petit verdot is planted in a north-south orientation, on a hillside with a medium slope and the presence of gravel at a shallow depth, and is surrounded by native mount of coronillas, which was preserved at the time of planting.

Each wine was made separately and aged for a year in 300-litre French oak barrels (second use).

The accumulated experience in cultivating French varieties drives the development of clones, that is, individuals that share characteristics of the same variety, but with subtle differences. In this case, we made a Pinot Noir 100% clone 777, one of the most suitable for red wines with high expression and aging capacity. The plants quickly adapted to the stony soil on the slopes of Cerro del Toro, in plots facing southeast two kilometers from the Atlantic.

Elaboration: the grapes were harvested on February from the SUR 10 plot (clone 777). In that sector of the slopes of Cerro del Toro, the soil has a silty loam texture, with the presence of calcium carbonate.

The harvest was carried out at night. Once the grapes entered the cellar, the bunches were destemmed, and the must underwent cold pre fermentation maceration for 5 days. Alcoholic fermentation was activated in stainless steel tanks with selected yeasts, at a controlled temperature of 24°C.

A post-fermentation maceration of 10 days was carried out. Half of the wine was sent to long-seasoned French oak barrels (36 months) and remained there for 12 months. In the following winter, the wine in barrels was blended with the wine that remained in stainless steel, to be bottled prior to stabilization and soft filtering – therefore, natural sediments can be found in the bottle.

The Chardonnay was fermented and aged for six months
in first-use French oak barrels. The grape used was
harvested from the plot called SUR 20 “Fósiles de mar”
from the vineyard in Piriápolis, very close to the Atlantic
coast, on a loamy clay soil with a high presence of
calcium carbonate.

The wine fermented without the addition of sulfur dioxide
or commercial yeasts; a minor portion of the wine
underwent partial malolactic fermentation. During the
aging in the barrels, the lees were moved (battonage) up to
a month before being bottled. Meanwhile, Viognier and

Albariño were produced separately in stainless steel
tanks, keeping their fine lees in suspension for six months.

Viognier comes from the plot SUR 12 “Escaleras”, planted
on a steep rocky slope, on the slope of Cerro del Toro
facing the sea.

Albariño came from the plot SUR 3 “Sobre Lías”, from
which the grape is also used for the wine that bears the
name of the plot.

The final blend was made in August, to later be stabilized,
filtered and bottled.

Hundreds of millions of years ago, the slopes of Cerro
del Toro -where the vineyard is located- formed part of
the seabed removed after the geological accident.
With the passage of time fossils of Acritarcas -small
ancient marine organisms- were deposited on the soil.

The SUR 20 Chardonnay square is planted on this type
of calcareous clay loam soil, oriented southeast facing
the Atlantic. With that fruit we make this singular
white.

Elaboration: the grapes were harvested on February
from the SUR 20 plot, in the coldest sector of the
vineyard located on the northeast slope of Cerro del
Toro and two kilometers in a straight line from the
Atlantic Ocean. The soil has a loamy clay texture with
the presence of calcium carbonate in depth.

Once the fruit entered the cellar, the clusters were
destemmed and, after leaving the press, the must was
subjected to a static cold racking for 48 hours.
Alcoholic fermentation was activated with native
yeasts in French oak barrels and in stainless steel tanks,
16 °C. Once the fermentation was finished, the fine lees
were kept, to start the aging process. In December the
wine was stabilized and filtered before bottling.

Fruit and oak go hand in hand in this highly complex red wine. An intense Tannat with an oceanic character, made with grapes from vineyards facing north. It was aged in French oak for 12 months (50%) which gives it delicate spicy aromas.

Elaboration: the grapes were harvested in March from different squares of the vineyard, some on stony soil at 120 meters above sea level, and others on the lower slopes of Cerro del Toro, where the soil has a clay loam texture, with presence of gravel. The clones of the plants are 717 and 474. Once the fruit entered the winery, the bunches were destemmed and the must underwent a preferential cold maceration for 24 hours.

Alcoholic fermentation was activated in cement tanks with selected yeasts and after 12 days the pomace was pressed. During maceration (at 24°C) two pump-overs and one daily stomping were carried out. Half of the wine was sent to French oak barrels, where malolactic fermentation took place, and completed a 12-month aging. At the end of that year the mixture of wine aged in cement and oak was made. It was bottled in June, with natural stabilization and soft filtering to preserve all its potential, so natural sediments can be found in the bottle.
