WINEMAKING
Hand harvest. Low-temperature vinification.
Precise mutage allows the alcoholic fermentation to be stopped, limiting the amount of residual sugar as much as possible, while preserving the natural acidity.
AGEING
A large part of the Wine is aged in Wine Globe (glass container) to preserve the purity of the fruit.

Syrahs come from 15 parcels located on sandy, granite and loess soils. Grenaches come from 21 parcels located on terroirs of sand, gravel and rolled pebbles.
WINEMAKING
Hand harvest. Table sorted and complete destemming.
AGEING
2/3 of the Syrah are aged in truncated wooden tank for 20 months. The rest in one-wine barrels. Grenache are aged in concrete vats to preserve the purity of the fruit.

WINEMAKING
Each grape variety is vinified separately. 50% of the blend is vinified in stainless steel tanks, 25% in concrete tanks and 25% in truncated wooden tank.
AGEING
Aged for 16 months in a mix of containers: 20% in foudres, 50% in stainless steel vats, 5% in truncated wooden tank and 5% in demi-muids. The remaining 20% were aged in amphoras for 12 months.
