The seafood from the Seto Inland Sea and Uwa Sea, which border Ehime Prefecture, is another major factor in the production of high-quality, delicious sake. In general, Ehime sake has a smooth, umami flavour that goes well with the local food culture, which features the light flavours of white fish from the Seto Inland Sea.
Surrounded by mountains and the sea, with few plains and a succession of steep land, Ehime Prefecture is divided into three regions from east to west: Toyo, Chuyo and Nanyo. Each of these three regions has its own unique climate and culture, and the character of the sake produced in each differs slightly. The sake of Toyo is light and refreshing. The sake of Chuyo is light but has a rich flavour. The sake of Nanyo has a full-bodied flavour.
