The grapes are harvested exclusively by hand.
Vinification
Saperavi is a local variety that characterize our terroir.
After the rigorous selection of the grapes, the Saperavi grapes maceration and
alcoholic fermentation takes place in concrete amphoras, strated exclusively
with indigineous yeasts.
The wine ages for 12 months in clay amphoras where malolactic fermentation
happens.
Tasting notes
A dark purple colour with intense reflections. Red fruits with a strong minerality
due to the maturation in clay amphoras. Spicy, straight, fresh with hints of varied
spicy peppered sensations. On the palate its tannic and dense, supported by a
generous body. The finish is very long with a touch of liquorice root and black
cherry.
Food and wine pairing
Excellent with Roasted potatoes and mushrooms. Roasted lamb, Veal Chops,
T-bone, Kobe.
Delicious with mature cheeses.

Harvest
The grapes are harvested exclusively by hand.
The vineyards sit at an altitude of 300 metres above sealevel and are
differentiated by exposure and soil type, thus helping to bring out the best in
each variety grown.
Vinification
Each parcel was harvested , processed and fermented separately to preserve the
territorial identity of each vineyard block.
The maceration and the alcoholic fermentation take place in opened big oak
vats (150 HL) for a period of 15-20 days, assisted by frequent pumping over .
The wine is aged in big Slavonian oak barrels for 2 years where also the
malolactic fermenattion occurs. After the final blend is done, the wine will age
in american barriques of 225 Liters for at least 14 months.
Tasting notes
An intense ruby-red colour to the eye. The nose has clear notes of red fruits
(cherries, blackberries and blueberries) followed by intense notes of licorice and
dark chocolate.
Consistent and balanced palate with soft tannins, shades of vanilla and
cardamom . Generous, voluminous and the same time fresh on the mouth, with
long and delicate post-taste.
Food and wine pairing
Naturally it is impossible not to focus on meat, not only with grilled and braised
meats but also game sauces, aged cheeses and cured meats. As a teaser, try it
with a piece of dark chocolate and a cigar.

Harvest
The grapes are harvested exclusively by hand.
Vinification
Rara Neagra and Saperavi are Moldavian local varieties that characterize our
terroir.
After the rigorous selection of the grapes, the Saperavi grapes maceration takes
place in concrete amphoras for a period of minimum 14 days.
The Rara Neagra grapes maceration happens in oak vats for a period of 10 days.
A frequent pumping over is applied for the whole period. The fermentation is
carried out only with indigenous yeasts.
The wine ages for 12 months in French Tonneaux where malolactic fermentation
happens.
Tasting notes
A dark ruby colour with purple reflections. The floral notes of violet and wild
rose accompanied by a complex of wild berry flavors and cocoa beans. The
finish is very long with a touch of liquorice.
Food and wine pairing
Well paired with lamb, grilled red meat and all type of cheese.

Harvest
The grapes are harvested exclusively by hand.
The vineyards sit at an altitude of 350 metres above sealevel and are
differentiated by exposure and soil type, thus helping to bring out the best in
each variety grown.
Vinification
Each parcel was harvested , processed and fermented separately to preserve the
territorial identity of each vineyard block.
After the grapes are picked up and selected manually, the grapes are destemmed
and gently pressed. The must was cooled down to a temperature of 5 degrees
using the criomaceration technique , to favour natural clarification and to
preserve maximum of varietal flavors.
After 6 h the must is transferred in stainless steel tanks where alcoholic
fermentation occurs at a controlled temperature of 12-14 degrees for 10-14 days.
The wine of Feteasca Regala and Riesling will mature in steel tanks with the
technique of battonage for 4 months at a controlled temperature.
Chardonnay will age for 4 months in 225 liters new oak barriques, on the lees.
Tasting notes
Golden colour with greenish reflexions. The bouquet is complex combining
hints of white fruit like pear with notes of exotic fruit such as pineapple, peach
and citrus notes of candied peel. On the palate it is sapid, mineral with an
elegant and harmonious finish of vanilla and cream.
Food and wine pairing
Perfect with risotto with seafood,grilled salmon, lobster with butter, seared
scallops. Consider rich and creamy cheeses like Brie or Camembert.
